Salmon is a healthy, delicious protein that can be used in a variety of dishes. Here are some of our favorite salmon salad recipes.

Classic Salmon Salad

Ingredients: -1 pound cooked salmon, flaked -1/2 cup mayo -1/4 cup diced onion -1 tablespoon diced celery -1 tablespoon diced red pepper -3 tablespoons chopped fresh parsley -2 teaspoons capers, drained -2 teaspoons Dijon mustard -1 teaspoon lemon juice -salt and pepper to taste Instructions: 1. In a large bowl, combine all ingredients and mix well. Season with salt and pepper to taste. Cover and refrigerate for at least one hour before serving. Enjoy! Notes: This recipe can also be made using canned salmon. Just make sure you drain any excess liquid before adding it to the salad. Salmon salad is also great served on a bed of greens or tucked inside a sandwich.

##Citrus Salmon Salad with Honey Vinaigrette Ingredients: For the salad: -1/2 pound cooked salmon, flaked -1 navel orange, segmented -1 pink grapefruit, segmented -1/4 cup chopped red onion For the dressing: -3 tablespoons honey -3 tablespoons white wine vinegar -1 teaspoon Dijon mustard -salt and pepper to taste Instructions: 1. In a medium bowl, whisk together all of the dressing ingredients until smooth. 2. In a larger bowl, combine the salmon, oranges and grapefruit segments. Pour the dressing over top and toss until everything is coated. Season with salt and pepper to taste if needed. Serve chilled or at room temperature. Enjoy! Notes: If you can't find pink grapefruit, you can use yellow or white instead. This salad can also be made without the salmon for a vegetarian option." ##Smoked Salmon Salad with Dill Vinaigrette Ingredients: For the vinaigrette: -3 tablespoons olive oil -3 tablespoons white balsamic vinegar -1 tablespoon chopped fresh dill -salt and pepper to taste For the salad: -8 cups mixed baby greens -1/2 cup chopped red onion -1/2 cup crumbled feta cheese -1 (6 ounce) package smoked salmon, cut into bite size pieces Directions: 1. To prepare the vinaigrette, whisk together olive oil, white balsamic vinegar and dill in a small bowl until combined. Season with salt and pepper to taste if desired. set aside. 2. In a large bowl, combine baby greens, chopped onion and feta cheese Crumble smoked salmon into bite size pieces and add to the bowl , toss everything together until coated evenly with dressing . Serve immediately . Enjoy!"

1 head romaine lettuce, chopped

2 cups cherry tomatoes, halved

Instructions:

-1 can (14 oz) of solid white tuna, drained -1/2 cup of crumbled feta cheese -1/4 cup of diced red onion -1/4 cup of diced green bell pepper -1/4 cup of diced cucumber -2 tablespoons of chopped fresh parsley -2 tablespoons of olive oil -2 tablespoons of red wine vinegar -1 teaspoon of dried oregano -Salt and pepper to taste

Instructions:

  1. In a medium bowl, combine the tuna, feta cheese, red onion, bell pepper, cucumber and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar and oregano. Season with salt and pepper to taste. Pour over the salad mixture and toss to combine. Serve chilled or at room temperature.
