2 tablespoons of white wine vinegar

1 tablespoon of Dijon mustard 7 tablespoons of olive oil, divided use)
Instructions:
- Preheat oven to 350 degrees F. Grease a baking sheet with about 1 tablespoon of olive oil. Place the fish filets on the baking sheet and brush them with some of the olive oil. Bake for about 12 minutes or until they are cooked through and flake easily with a fork.
- In a large bowl, combine the diced red onion, celery, bell pepper, parsley, tarragon, white wine vinegar, Dijon mustard, and 6 tablespoons of olive oil. Mix well.
- When the fish is cooked through, remove it from the oven and let it cool slightly before chopping into bite size pieces and adding to the salad bowl. Toss everything together well and serve immediately. Enjoy!
